The chimp is demonstrating eidetic memory. We all have that when we are young but appear to sacrifice it to other cognitive functions as we grow up.

I wonder what people who think animals  just react instinctively make of this?

This seems to show they knew how the world works and reacted  with surprise when it didn't

An "instinct" is a fixed pattern of behaviour which is demonstrated by all members of a species in response to a particular stimulus. I suspect that here you are using "instinctively" to mean something like "without comprehension" or "without showing any connection with the content of the stimulus activity".

I suspect that the great apes, which can be taught aspects of linguistic communication by means of sign language, are capable of learning conceptually but lack the ability to do so expressively.
