Vlad, 'the establishment' is the the Tory Party, the Trades Unions, the Labour Party, the Liberal Democrats, the Church of England, Wimbledon, the Houses of Parliament, the police and other emergency services, the Bank of England, the SNP (at least in Scotland more recently) the BBC, ITV, ... . In other words, it is any organisation that 'exercises power and influence over matters of policy, opinion, or taste, and is seen as resisting change'. http://www.oxforddictionaries.com/definition/english/establishment?q=the+establishment#establishment__9

This applies as much to politics and society - as it does to sport and music or academia.
Are your, or your friends'/relatives', garages, lofts or sheds full of unused DIY gear, sewing/knitting machines or fabric and haberdashery stuff?

"The Establishment" is whoever the speaker dislikes and thinks is plotting against them.
I came to realise that every time we recognise something human in creatures, we are also recognising something creaturely in ourselves. That is central to the rejection of human supremacism as the pernicious doctrine it is.
